Method:

  1. Heat olive oil in frying pan.

  2. Place pork in oil. Gently brown over medium heat, turning to brown both sides.

  3. Remove pork and cover to keep warm and moist.

  4. Deglaze pan with ginger wine, bringing sauce to a boil. Continue cooking until sauce is reduced by half.

  5. Add cream, salt and pepper. Mix well and heat over low heat until sauce thickens. Do not let the sauce boil after adding cream!

  6. Plate the pork and cover with sauce.

You can add other herbs, such as rosemary, as well as garlic and other ingredients to this.  Use your imagination!
