Painkiller Ice Cream Recipe

This is Walker's original recipe for a very rich and creamy ice cream that tastes like a painkiller!

Ingredients:

3 cups dark rum (Pusser's preferred, but any dark rum will do).
3 cups heavy cream
3/4 cup cream of coconut (Coco Lopez) - make sure you use cream of coconut, not coconut milk!
5 Tbs frozen concentrated pineapple juice, thawed
3 Tbs frozen concentrated orange juice, thawed
2 Tbs rum extract
4 oz crushed pineapple, drained well

Additional:

Fresh grated nutmeg

Method:

Pour the rum into a sauce pan and reduce by 2/3 (boil over high heat until 1 cup remains). This step is important because the alcohol must be removed from the rum in order for the ice cream to freeze properly. The additional reduction is necessary to reduce the liquid content being added to the ice cream mixture, and it intensifies the rum flavor.

Cool rum by placing saucepan in a bowl with ice in bottom of bowl.

Put all ingredients in ice cream freezer tub and stir until combined.

Freeze in ice cream freezer as normal.

When serving, grate fresh nutmeg over top of each bowl. This is an important step!

Note: You should be able to find frozen concentrated pineapple juice at your grocery, right next to frozen concentrated OJ.

Painkiller Milk Shake!

By the way, if you want the ultimate frozen drink, make a milkshake using this ice cream and a good gold or dark rum - about 1 part rum to 3 parts ice cream. Of course, grate fresh nutmeg on top.
